Roasted Tomato and Burrata Dip

This recipe takes that inspiration: juicy roasted cherry tomatoes seasoned with paprika and Italian herbs, topped with creamy burrata, fresh basil, and a drizzle of balsamic glaze. Pair it with homemade crostini for the ultimate dip-and-scoop appetizer.
It’s one of those dishes that requires hardly any effort. Whether you’re hosting friends or just want a snack that tastes like summer, this is a recipe you’ll come back to again and again.
Ingredients
20 oz colorful cherry tomatoes
3–4 tbsp olive oil, divided
1 tsp paprika
1 tbsp Italian seasoning
Salt and freshly cracked black pepper, to taste
1 large ball fresh burrata cheese or 3-4 smaller balls
Handful of fresh basil, thinly sliced
Balsamic glaze, for drizzling
1 French baguette (for crostini)
Instructions
For Roasted Tomatoes
Preheat oven to 425°F.
Place cherry tomatoes in a deep baking dish (such as a brownie or casserole pan).
Drizzle 2-3 tbsp of olive oil, then sprinkle with paprika, Italian seasoning, salt, and pepper. Toss until evenly coated.
Roast for 20 minutes, until tomatoes are softened and beginning to blister.
Remove from oven, gently press/pop the tomatoes with a spoon to release juices, then return to roast for another 5 minutes.
Transfer to a wide, shallow serving bowl and allow to cool slightly.
Homemade Crostini’s
Slice the baguette into ½-inch thick pieces.
Toss slices with olive oil, salt, and pepper.
Arrange on a baking sheet and bake at 425°F for 10–15 minutes, until golden and crisp.
Assemble
Place burrata on top of the roasted tomatoes.
Scatter fresh basil over the dish.
Finish with a drizzle of balsamic glaze, a touch more olive oil, and a sprinkle of salt and pepper.
