Directions
Cook & Shred the Chicken:
In a large skillet or pot, place chicken with spices, salt, pepper, and broth. Bring to a simmer, cover, and cook on low for 15–20 minutes (or until the chicken is cooked through and shreds easily). Shred with two forks, squeeze in lime juice, and simmer uncovered for another 2–3 minutes to reduce any excess liquid.Make the Pineapple Salsa:
In a medium bowl, combine pineapple, sweet onion, cilantro, lime juice, salt, and pepper. Chill to allow flavors to meld while the chicken finishes.Stir Together the Cilantro Lime Cream:
Blend sour cream, lime juice, cilantro, and a pinch of salt until smooth. Set aside.Assemble the Tacos:
Spread the cilantro lime sauce on warm tortillas, fill with pulled chicken, a scoop of pineapple salsa, and hot sauce if desired. Add extra toppings if you’d like, and serve with lime wedges on the side. Enjoy!!!
