Pulled Chicken Tacos w/ Cilantro Lime Sauce

These tender pulled chicken tacos are packed with flavor and finished with a zesty cilantro lime sauce that takes them to the next level.

This chicken recipe is perfect for taco night or simply meal prepping delicious chicken.

Ingredients

For the Pulled Chicken

  • 1½ lbs boneless, skinless chicken breasts

  • 1½ tsp chili powder

  • 1 tsp smoked paprika

  • ½ tsp cumin

  • ½ tsp garlic powder

  • Salt & pepper, to taste

  • ½ cup chicken broth or water

  • Juice of ½ lime

For the Pineapple Salsa

  • 2½ cups fresh pineapple, finely diced

  • ½ cup sweet onion, finely diced

  • ¼ cup fresh cilantro, chopped

  • Juice of 1 lime

  • Salt and pepper, to taste

For the Cilantro Lime Cream

  • ½ cup sour cream

  • Juice of ½ lime

  • 2 tbsp fresh cilantro, finely chopped

  • Pinch of salt

To Serve

  • 8 small corn or flour tortillas, warmed

  • Optional toppings: sliced jalapeño, avocado, extra cilantro, shredded cabbage or lettuce, lime wedges

Directions

  1. Cook & Shred the Chicken:
    In a large skillet or pot, place chicken with spices, salt, pepper, and broth. Bring to a simmer, cover, and cook on low for 15–20 minutes (or until the chicken is cooked through and shreds easily). Shred with two forks, squeeze in lime juice, and simmer uncovered for another 2–3 minutes to reduce any excess liquid.

  2. Make the Pineapple Salsa:
    In a medium bowl, combine pineapple, sweet onion, cilantro, lime juice, salt, and pepper. Chill to allow flavors to meld while the chicken finishes.

  3. Stir Together the Cilantro Lime Cream:
    Blend sour cream, lime juice, cilantro, and a pinch of salt until smooth. Set aside.

  4. Assemble the Tacos:
    Spread the cilantro lime sauce on warm tortillas, fill with pulled chicken, a scoop of pineapple salsa, and hot sauce if desired. Add extra toppings if you’d like, and serve with lime wedges on the side. Enjoy!!!
