Herby Greek Turkey Meatball Bowl
Fresh, herby Greek turkey meatball bowls served over rice with a crisp cucumber salad and creamy homemade tzatziki. This bowl is light, flavorful, and one of my favorite easy dinners when I want something fresh but still satisfying. I also like to make the meatballs in bulk for easy meal prep throughout the week.
Ingredients
Greek Turkey Meatballs
1 lb ground turkey
1 egg
½ cup breadcrumbs
2 cloves garlic, minced
½ shallot, finely minced
¼ cup fresh dill, chopped
1 tsp dried oregano
Salt and pepper
Olive oil (for cooking)
Cucumber Salad
1 large cucumber, chopped
¼ cup red onion, diced
2 tbsp fresh dill, chopped
1–2 tbsp rice wine vinegar
Juice of ½ lemon
Salt and pepper
Homemade Tzatziki
1 cup whole-fat Greek yogurt
2 tbsp extra-virgin olive oil
Juice of ½ lemon
½ cup finely chopped or grated cucumber
2 cloves garlic, finely chopped
2 tbsp fresh dill, chopped
Salt and pepper
Pinch red pepper flakes (optional)
For Serving
Cooked white rice
Red pepper hummus
Instructions
Make the tzatziki
In a bowl combine the Greek yogurt, olive oil, lemon juice, cucumber, garlic, and dill. Season with salt, pepper, and red pepper flakes. Stir well and refrigerate while preparing the rest so the flavors develop.
Make the cucumber salad
In a bowl combine the cucumber, red onion, and dill. Add rice wine vinegar, lemon juice, salt, and pepper. Toss together and set aside.
Prepare the meatballs
In a large bowl combine the ground turkey, egg, breadcrumbs, garlic, shallot, dill, oregano, salt, and pepper. Mix until just combined and form into small meatballs.
Cook the meatballs
Heat olive oil in a skillet over medium heat. Add the meatballs and cook about 4–5 minutes per side, turning until browned. Cover the pan for the last 2–3 minutes to ensure they cook through.
Assemble the bowl
Add cooked rice to a bowl. Top with the turkey meatballs, cucumber salad, a scoop of tzatziki, and red pepper hummus.
